Instant Pot White Bean Chicken Chili

This White Bean Chicken Chili is packed with hearty Great Northern Beans, shredded chicken, and veggies for an easy weeknight meal that is as nutritious as it is delicious. Load on all your favourite toppings for a comforting, cozy dish everyone will love!

Ingredients

2 cups (500 ml) cooked Great Northern beans

1 cup (250 ml) frozen corn

1 red bell pepper, diced

1 4.5 oz (113 ml) can chopped green chiles

1 yellow onion, diced

1 lb (454 g) boneless skinless chicken breasts

2 tsp (10 ml) chili powder

1 tsp (5 ml) garlic powder

1 tsp (5 ml) salt

½ tsp (2.5 ml) black pepper

½ tsp (2.5 ml) smoked paprika

½ tsp (2.5 ml) cumin

6 cups (1.5 L) chicken or vegetable broth

½ cup (125 ml) full-fat sour cream

Juice from a lime

Salt and pepper, to taste

Optional garnishes: tortilla strips, shredded cheese, sliced green onion, sliced jalapeno, chopped cilantro, diced avocado

Instructions

  1. Add the beans, corn, bell pepper, green chiles, and onion to the instant pot; nestle the chicken in between and sprinkle with all the spices.
  2. Pour the broth over the top, close the lid, and pressure cook on high for 20 minutes.
  3. Allow pressure to naturally release for 8 minutes, before releasing the remaining pressure with quick release, about 2 minutes.
  4. Carefully remove the lid, and use tongs to remove the chicken to a bowl or large cutting board. Shred the chicken with two forks and return the chicken to the instant pot, along with the sour cream and lime juice.
  5. Stir to incorporate. Add salt and pepper, if needed.
  6. Garnish with your favourite toppings, such as tortilla strips, shredded cheese, green onion, jalapeno, chopped cilantro and/or avocado. Enjoy!
