Sun-Dried Tomato and White Bean Gnocchi

Great Northern Beans add protein to this creamy, comforting Sun-Dried Tomato and White Bean Gnocchi, made with only 10 ingredients and on the table in 20 minutes for an easy meal on busy weeknights.

Ingredients

¼ cup (60 ml) sun-dried tomatoes, packed in oil

16 oz (454 g) package of gnocchi

2 cups (500 ml) cooked Great Northern beans

3 cloves of garlic, minced

1 tsp (5 ml) Italian seasoning

¼ tsp (1 ml) salt

¾ cup (190 ml) low-sodium chicken or vegetable broth

½ cup (125 ml) heavy whipping cream

¼ cup (60 ml) Parmesan cheese, grated

2 cups (500 ml) baby spinach

Garnish: fresh parsley or basil, chopped

Instructions

  1. Heat a large skillet over medium heat. Drain and chop the sun-dried tomatoes, and add them to the pan along with the gnocchi, beans, garlic, Italian seasoning, and salt; cook for 3-5 minutes, stirring occasionally, until gnocchi is lightly browned.
  2. Add broth, cream, and Parmesan to the skillet; stir to incorporate. Bring to a simmer, lower the heat, and continue simmering for 5-7 minutes, or until sauce has thickened to coat the back of a spoon.
  3. Add the spinach to the skillet, stir, and cover, cooking until the spinach is wilted, about 2-3 minutes.
  4. Garnish with fresh herbs, if desired, and serve!
