Chocolate Peanut Butter Black Bean Bites

Chewy, sweet, and salty, these Chocolate Peanut Butter Black Bean Bites are packed with protein and fibre for a feel-good snack that you can take on the go.

Ingredients

¾ cup (190 ml) quick oats

1 19oz (540ml) can black beans, drained and rinsed

1 cup (250 ml) smooth natural peanut butter

⅓ cup (80 ml) honey

¼ cup (60 ml) unsweetened cocoa powder

Pinch of salt

½ cup (125 ml) peanuts, crushed

Instructions

  1. Add oats, black beans, peanut butter, honey, cocoa powder, and salt to a food processor. Pulse until well combined.
  2. Roll the mixture into 1-inch balls, and then roll in crushed peanuts. Enjoy immediately or store in an airtight container in the fridge for 5-7 days.

Notes

Don’t have quick oats? Blitz some rolled oats or large flake oats in the food processor a few times before adding in the rest of the ingredients for the same chewy texture as quick oats.
