Black Bean & Chicken Fajita Bowls

These black bean chicken fajita bowls are a family favourite recipe I’ve been making for years! Full of fresh flavours, juicy chicken thighs and of course Canadian black beans! This is a perfect meal for a weeknight dinner. Quick, easy, nutritious and delicious!

Ingredients

1 can (540 mL / 19 fl oz) Canadian black beans, rinsed

1 cup instant rice (minute rice)

4 tbsp olive oil (divided) 

1 cup water 

1/2 cup salsa 

*taco seasoning (divided)

1 small onion, chopped

2 bell peppers of your choice, sliced

1 cup shredded cheddar cheese 

6 boneless chicken thighs 

*Taco seasoning ingredients: 

2 tbsp chili powder

1 tsp garlic powder

1 tsp paprika

1 tsp cumin

1 tsp salt

Optional sour cream for topping

Instructions

  1. Take your boneless chicken thighs, pat dry and chop into 1 inch strips, then add to a bowl.
  2. Sprinkle half your taco seasoning over your chicken and drizzle 2 tbsp of olive oil over top of the seasoning and chicken.
  3. Mix well, until chicken is evenly coated.
  4. To a large skillet, add 1 tbsp olive oil over medium heat. Once oil is heated through, add your chicken and cook until there is no pink left on your meat.
  5. Remove your cooked chicken from the pan, to a bowl.
  6. In the same skillet, heat another tablespoon of oil on medium heat. Add the onions and bell peppers to the pan, sprinkle with the remaining half of your taco seasoning, mix well and sauté for 2-3 minutes.
  7. Add your water and salsa to the pan along with your rice and stir until combined. Cover and let simmer for 5 minutes. Add your Canadian black beans, stir and allow to cook for an additional 5-10 minutes until rice is cooked through.
  8. Once rice is cooked, remove from heat and add the cheese. Stir so it is evenly distributed and melted.
  9. Portion rice mixture into bowls and top with your cooked chicken thighs.
