White Bean Shakshuka

It’s a 30-minute meal that works for both brunch and dinner! We love it served with a fresh baguette for a tasty and satiating dish that can be prepped ahead of time.

Ingredients

  • 1 small onion, diced
  • 1 tbsp jalapenos, diced (optional)
  • 1/2 tbsp olive oil
  • 1 tbsp cumin
  • 1 tbsp oregano
  • 2 tomatoes, peeled and diced
  • 1 can (28 oz) whole tomaotes
  • 2 cups cooked or 1 can (540 mL) greatnorthern beans, drainedand rinsed (see tips)
  • 4 eggs
  • 1/4 cup feta cheese, crumbled
  • parsley or fresh mint, to garnish

Instructions

  1. Sauté onion and jalapenos (if using) in ½ tbsp olive oil in a cast iron pan or large skillet. Add in cumin and oregano, stirring until fragrant, 3-4 minutes.
  2. Stir in diced tomatoes. Crush whole canned tomatoes with hands and add into the skillet along with liquids. Let it cook for 15 minutes until most of liquid has cooked off.
  3. Stir in beans and let cook for an additional 2-3 minutes.
  4. Create 4 small holes in the sauce. Crack eggsinto holes, cover pan andlet cook for 6 minutes.
  5. Remove from heat and garnish withfeta and herbs. Serve immediately.

Notes

You can also use other white beans like white kidney, cannellini, or navy beans.
